What's For Dinner?


















Hmm... sauteed chicken with zucchini and red onions!  Yum.  The picture above is my plate before and I won't show you the after lol:)  I was a pig very satisfied with my little meal.  Coincidentally, this was also a nutritious meal with veggies, whole grain pasta, and lean chicken breasts.  See...you don't have to sacrifice taste to have a healthy meal!  Do you have any tasty meals that are good for you too?   1. That looks awesome Belle! Red onions are sooo good!! Did you use skinless chicken breasts? I have some in the freezer. I would love to make this. I am in SUCH a veggie rut right now, only eating brussels sprouts when I eat vegetables! Chocolate cake would get old for every meal (maybe lol). Lord willing, I hope to get some spaghetti squash and eggplant and some zucchini this weekend.

    Thinking about you and your training. Praying God's strength for you!

  2. Thanks Josie! You are just the sweetest girl ever:) I did use skinless chicken breasts. I cooked them with just a little oil and salt and pepper. Then I moved them to a bowl and put the cut up veggies in the same pan adding a little more salt and coarsely ground pepper till they were cooked. I then moved them to another bowl and put the pasta( I boiled some at the same time I was cooking the chickena0 in the pan to get a little flavor. Then I put everything together. It only took me about 30 minutes to cook and was super good:) Hmmm! I could use some cake now lol!
